Cholesterol ester is a dietary lipid derived from cholesterol. It is formed when the enzyme in the human body metabolizes cholesterol. The ester bond is formed between the carboxylic acid group of a fatty acid and the hydroxyl group of cholesterol. Cholesterol esters are widely distributed in the body fluids of animals (plasma lipoproteins) and may also exist in the form of fatty streaks in the arterial walls in atherosclerosis. Due to their strong hydrophobicity, cholesterol esters have low solubility in water.
